Niortskali (Garlic Sauce)

A zestful companion to Chicken Tabaka or grilled fish.

Makes about half of a cup

1/2 cup of chicken broth
4 garlic cloves, peeled and roughly chopped
1/4 teaspoon of salt
A pinch of paprika or 1/8 of a teaspoon
A dash of cayenne
1 tablespoon of chopped cilantro

In a small saucepan heat the chicken broth. With a mortar and pestle, mash the garlic with salt until creamy paste is formed. Whisk the garlic into the broth along with the paprika and cayenne. Just before serving, stir in the cilantro.
